Za'atar Aubergine + Feta Salad

feta cheese, cut into small fingers ready to be charred

baby spinach, washed and dried

plum tomatoes, washed and cut

fresh flat-leaf parsley, chopped

extra virgin olive oil

lemon, juiced

spring onions, finely sliced

Za’atar spice blend (or ready made)

lightly toasted sesame seeds
½ tbsp
ground sumac
½ tbsp
dried thyme
¼ tbsp
sea salt
¼ pinch

extra virgin olive oil

cumin seeds
1 tsp
ground sumac
1 tsp
salt

METHOD

Soaking and cooking the freekeh: Place in a bowl, cover with twice as much water and let soak for 2 hours or overnight.
Rinse and drain and boil the freekeh till it is cooked but has a firm texture. Drain and allow to cool.
Roasting the aubergine: Preheat the oven to 200°C.
Cut the aubergine into 3cm squares. Place on a baking tray, drizzle with olive oil, sumac and cumin seeds and toss with your hands so each square is lightly coated in oil and spices.
Bake in the oven for around 20 – 30 minutes or until golden and soft.
Making the salad: Mix the chickpeas, cooked freekah, roasted aubergine, olive oil, parsley, lemon juice, sesame seeds, sumac, thyme and Za’atar in a large serving bowl.
Place the feta on a metal tray and lightly char with a blow torch.
Divide the ingredients between four bowls and enjoy!
