10” wholemeal tortilla wraps
Beat the eggs and season with salt and pepper.
Chop the coriander and mash the avocado.
Heat a pan with a little oil and cook the eggs to a soft scramble.
Fold in the coriander, harrisa and corn.
Spread the mashed avocado on each wrap.
Divide the mixed scrambled eggs between four and place it on the top of each tortilla. Wrap the tortilla and enjoy!
