Spiced Mackerel + Alfalfa on Wholegrain

smoked mackerel, skinless

alfalfa

cucumber, peeled + sliced (200g prepped weight)

Icelandic style probiotic yoghurt, full fat
90g
cajun spice
3g
lemon, zest and juice

pepper
1g

METHOD

Flake the mackerel and mix with the yoghurt, the spice and lemon.
Use this to ‘butter’ both sides of the bread, then the cucumber.
Add the alfalfa to one side and close the sandwich with the other slice.
