Peel and dice the avocado.
Chop the plum tomato, add to the avocado, onion, parsley and olive oil. Season.
Poach the eggs to your liking, drain on a kitchen paper.
Heat the barley grain and place as per the picture, add the eggs and top with the rest of the ingredients.
