Salmon + Salsa Spinach Wrap

spinach wraps
4 x 10” (60g)
salmon, skinless and boneless (280g cooked weight)
350g
Salsa
red pepper, deseeded and diced
100g
red onion, peeled and diced
100g
olive oil
20g
mint, chopped
10g
coriander, chopped
10g
yoghurt
60g
gherkins, sliced
80g
cos lettuce
80g
salt
0.5g
pepper
1g

METHOD

Preheat the oven to 200C.
Marinate and roast the salmon for 10-12 minutes and allow to cool. Flake.
Make the salsa.
Spread the yoghurt over the wrap.
Layer the salmon, salsa, gherkins and lettuce on top.
Fold up the wrap.
