slices of wholemeal bread
8 x 40g
fresh salmon, skinless and boneless (280g cooked weight)
cucumber, prepped weight
Greek full fat yoghurt
cucumber finely diced
Poach the salmon with the lemon juice and seasoning and allow to cool and flake.
Make the Raita.
Butter both slices of the bread with the Raita.
Top one half with the flaked salmon.
Add the cucumber and watercress.
Close the sandwich with the other slice, cut in half and serve.
