skinless chicken thighs
4 x 125g
buckwheat (700g cooked weight)
medium oranges, zested, segmented and diced (300g flesh weight)
lemon, zested and juiced
Preheat the oven to 180C.
Marinate the chicken in the cajun spice and oil and bake until cooked.
Segment the oranges, reserving any juice.
Mix the buckwheat with the orange and lemon zests, the spring onion and season.
Make a dressing with the olive oil, seasoning, lemon juice and any juice from the oranges.
Place with the rocket leaves in the serving container.
Top with sliced chicken and serve the dressing separately in a 1oz pot.
