mixed cooked beans (no added salt or sugar)

tinned tuna chunks (in spring water)

courgette, spiralized

green olives (pitted)

chopped parsley

mixed salad leaves (washed and drained)

red chicory

extra virgin olive oil

red wine vinegar

salt

freshly ground black pepper

METHOD

Drain the mixed beans and then rinse well under running cold water. Drain.
Drain the tuna and mix with the parsley.
Prepare the rest of the ingredients.
Arrange and serve the dressing in a 1oz pot.
