fresh or thawed frozen raspberries
desiccated coconut, unsweetened
coconut milk, sweetened
kiwi (140g flesh weight), diced
Mash the raspberries in a bowl.
Add the vanilla extract, desiccated coconut and chia seeds and combine.
Pour the milk over the ingredients, mix together and then divide the mix between your four bowls. Leave a good gap at the top of the bowl for the rest of your ingredients.
Set the bowls aside and soak overnight in the fridge.
The following day top each bowl with the nut butter, diced kiwi and mint and enjoy!
