tinned coconut milk
sweet potato, peeled and cut into cubes, 300g prepped weight
medium onion thinly sliced
brown rice, 400g cooked
Heat cooking oil on a medium heat pan and add the Massaman curry paste.
Cook for a minute and then add the sweet potato and cook this for 2-3 minutes.
Add the coconut milk to it, mix well and cook it covered for 5-10 minutes.
Add the Quorn, onions, fish sauce and cashews.
Mix everything together and cook covered for 15 minutes on medium heat.
Cook the rice and steam the choi sum.
Divide the rice and choi sum between four bowls and add the Quorn curry to each.
Serve hot and enjoy!
