overcooked quinoa (cooked weight, 150g raw)
green apples, cored weight (grated, when needed)
pumpkin seeds, toasted
golden flaxseeds, toasted
sunflower seeds, toasted
coconut flakes, unsweetened, toasted
Make sure you overcook your quinoa in water without salt. So the tail of the quinoa has separated from the grain. Do not run under water to cool, just drain and lay in a tray.
Toast the seeds and the coconut, cool and put to one side for topping.
Grate the green apples into the lemon juice to stop them from oxidising.
To finish the bircher, combine all ingredients except for the seed and coconut topping topping and thoroughly mix.
Divide the mixed bircher into 10 bowls and top with the toasted seed and coconut topping, try to cover the entire surface with an even spread.
Serve and enjoy!
