Preheat the oven to 180C.
Roast the chicken and allow to cool - pull.
Roast the red onion until soft. Cool.
Make the guacamole and season.
Spread the guacamole on the bottom half and add the pulled chicken.
Add the baby spinach and red onion.
Close the bap.
