avocados (prepped weight)
mixed cooked beans, (pinto bean and kidney beans), drained weight
red onion, finely diced
coriander, leaves only, roughly chopped
punnet cherry tomatoes, halved
rocket leaves, washed and dried
extra virgin olive oil
red chilli, deseeded and finely sliced
Boil the eggs. Cool.
Make the dressing and whisk the oil, balsamic, chilli, cumin and season, set aside.
Mix the beans, onions and pour over the ½ the dressing, season and mix well.
Arrange the rest of the ingredients and place the dressing in a 1oz pot.
