brown rice (weight after cooking 400g)
red rice (weight after cooking 300g)
kale (picked and washed)
baby spinach (picked and washed)
leeks (sliced and washed)
peanuts, toasted and crushed
Youchang (fermented korean red bean paste)
Cook your rice.
Lightly stir fry the greens and peas until cooked.
Boil the eggs for 6 minutes. Peel and halve.
Place the rice and greens in a bowl and add the dressing and spring onions.
Top the dish with the eggs and crushed peanuts and enjoy!
