Goji Buckwheat Blueberry Bircher Bowl

buckwheat groats
400g
apple juice
200ml
ground cinnamon
½ tsp
maple syrup
90g
Topping
blueberries
150g
peanuts, toasted
80g
goji berries
4 tbsp
apple, grated
120g

METHOD

Soak the buckwheat in the apple juice (and a little more water if needed) for 1hr or until tender. When the buckwheat is soft enough you should be able to squash the grains between your fingers.
Drain the buckwheat in a sieve with a bowl underneath to catch the apple juice.
Blend the buckwheat, the remaining apple juice, cinnamon and maple syrup until smooth.
Divide the buckwheat between 4 bowls and top with the blueberries, goji berries, grated apple and toasted peanuts and enjoy!
