Preheat the oven to 180C.
Cook the freekah, drain and run over cold water.
Rub the chicken with the honey, ½ tbsp. oil and sesame and bake for 12 minutes, until cooked.
Make the dressing by mixing the olive oil, tahini and lemon juice together.
Cook the red onion for a few minutes and add the Cajun spice.
Add the freekeh to the onions and heat through.
Spiralize the courgettes and flash fry in another pan for 10 seconds until still crisp and green.
Divide the freekah and spiralized courgettes between four bowls and place a cooked chicken breast on each bowl.
Pour the dressing on each bowl and top with the pomegranate and chopped coriander and enjoy!
