Eggs + Avo on Wholegrain

slices of medium wholemeal bread

avocado, diced
150g
spinach
70g
plum tomatoes
200g
extra virgin olive oil
7ml
salt
0.5g
pepper
0.5g
lime, juiced

METHOD

Peel and crush the avocado, add the lime juice and lightly season to your preferred taste.
Slice the plum tomatoes, shred the spinach and add to the avocado to one bowl and drizzle with the olive oil and season.
Poach the eggs to your liking and drain on kitchen paper.
Toast your bread and add the spinach, avocado and tomato mix and top with your poached egg.
