8 x 40g slices
cos lettuce, shredded, washed and dried
chicken, skinless and boneless, poached and diced
stalks (80g) celery, finely diced
med (150g) braeburn apples (cored weight), diced
Mix the ingredients with the mayonnaise and seasoning.
Place half of the mixture over one slice and half on the other.
Top with the cos lettuce and carefully close the sandwich.
