slices wholemeal bread
8 x 40g
chicken, skinless and boneless, poached and sliced (200g cooked weight)
avocado, sliced and squeezed with lemon
cos lettuce, washed and cut into 3 pieces
Spread the mayo over both slices of bread.
Slice the cooked chicken and place on the bread, top with the tomatoes, avocado and 2 pieces of lettuce, these should fit nicely onto the bread if cut into 3 or 4’s depending on the size.
Season and close the sandwich, cut and serve.
