black rice (180g when cooked)
extra virgin olive oil
Cook the black rice, drain and cool.
Very lightly coat the tofu in 1tsp olive oil.
Sear the tofu in a hot pan, till lightly browned.
Grate the carrot and dice the radish, wash the watercress, drain.
Assemble the ingredients in layers in a suitable serving container, with the rice on the bottom.
Mix the dressing together and then dress the salad.
